Technical notes: The work starts with a hand selected picking and a long pre-fermentative cold maceration. After low temperature fermentation (25-26 ºC) it ends with an aging of 6 months in French and Hungarian oak barrels.

Tasting Notes: Red cherry color with purple hues. An intense fruity nose of berries highlight in a still glass. Balsamic and spicy notes indicate its time in oak. First taste is fresh and fleshy with a mineral aftertaste.

Service: Serve between 14 and 16ºC
Aging Potential = 2 - 6 years

Vineyard: Our Bobal and Tempranillo grapes come from vineyards in the hamlet of La Vallesa in Siete Aguas, located at 830 meters above sea level. These are old vines (50 years) of low yield. A clay soil with some limestone outcrops highlights. Vast horizons of high porosity appear, low in organic matter. The Syrah comes from vines in dry valley of Fontanares, planted in loamy clay soils.

Weather: In La Vallesa we have an exceptional microclimate for growing quality grapes, due to its topography, which gives the valley a wide temperature range for ripening. The summer of 2008 was hot and long, so the ripening of the grapes was excellent. Timely rains were taken at the time of fruit set and ripening, however it was a fairly dry spring season. The rainfall recorded from march till the date of harvest was 90mm. Low yield, but very good quality. No heavy rains during September allowed optimal picking dates. 2009 was a weird year with an optimal start of cycle. May and June were dramatically dry season, but Summer was chill and rainy. Lot of work to assure good aeration was done on field: green harvest to reduce bunchs and leaves. September was rainy with week episodes of non-stop rain. Therefore, harvest of Tempranillo and Syrah converged.
