Technical notes: Cota 830 has been harvested by hand only when the optimal glycolytic and phenolic maturity overlap. After a rigorous selection of grapes, it has fermented with endogenous yeast which gives it their particular tipicality. Malolactic fermentation is done in Allier and Tronçais forest oak barrels, where it completes aging on lees after several "batonage". After 24 months in barrel and 18 months rounding-procedure in bottle, born this wine of unique bouquet.

Tasting Notes: Colour: High to mid-depth colour, very clean cherry red. Persistent tear.
Nose: Very expressive, wild fruits aromas such as blackcurrants, blackberries, combined with other more mineral and balsamic tones, of mediterranean forest aromatic undergrowth.
Mounth: In mounth it has a good intensity, with sweet rounded tannins and good acid-base balance. Enveloping and with a long and pleasant aftertaste.

Food pairing: Red meats, lamb and stews.

Service: Serve between 16 and 18ºC
Aging Potential = 4 - 7 years

Vineyard: Our Bobal and Tempranillo grapes come from vineyards in the hamlet of La Vallesa in Siete Aguas, located at 830 meters above sea level. These are old vines (50 years) of low yield. A clay soil with some limestone outcrops highlights. Vast horizons of high porosity appear, low in organic matter.
